Instant Pot Vegan Korma

Onion paste

1 medium onion

1/3 c cashews soaked in water for 30 min, drain

2 inches Ginger

4 cloves Garlic

Veggie ingredients

1 packet of Shaan Korma seasoning

1 14-oz can tomato sauce

114-oz can coconut milk

2-3 cubed potatoes

1 head cauliflower broken into florets

1 c frozen peas

3 large carrots chopped

1T Lemon juice

1-2 T sugar

Instructions:

  1. Puree onion, garlic, gingerand cashews.
  2. On sauté, add oil, spices, and onion puree. Stir until well combined.
  3. Add coconut milk and can of tomato sauce.
  4. Stir in cubed potatoes (2-3 russets). Cook for 5 minutes to soften potatoes.
  5. Add cauliflower, peas, carrots.
  6. Press “cancel” and put on lid.
  7. Pressure cook on high for 6 minutes.
  8. Salt to taste, 1t lemon juice, 1-2 T sugar.
