Onion paste
1 medium onion
1/3 c cashews soaked in water for 30 min, drain
2 inches Ginger
4 cloves Garlic
Veggie ingredients
1 packet of Shaan Korma seasoning
1 14-oz can tomato sauce
114-oz can coconut milk
2-3 cubed potatoes
1 head cauliflower broken into florets
1 c frozen peas
3 large carrots chopped
1T Lemon juice
1-2 T sugar
Instructions:
- Puree onion, garlic, gingerand cashews.
- On sauté, add oil, spices, and onion puree. Stir until well combined.
- Add coconut milk and can of tomato sauce.
- Stir in cubed potatoes (2-3 russets). Cook for 5 minutes to soften potatoes.
- Add cauliflower, peas, carrots.
- Press “cancel” and put on lid.
- Pressure cook on high for 6 minutes.
- Salt to taste, 1t lemon juice, 1-2 T sugar.
