Air-fried Roasted Stuffed Peppers

We got a new kitchen toy, the Phillips TurboStar Air Fryer! After a “warmup” with biscuits, home fries, and bacon, I was ready to to go big! These peppers are smoky, have a beautiful char, and a kid-friendly filling.

Smokey stuffed peppers

Ingredients

  • 6-8 bell peppers
  • olive oil
  • 1 lb lean ground chicken (or sub tofu crumbles)
  • 1 can black beans
  • 1 c cooked brown rice
  • 1 T cumin
  • 1 t garlic powder
  • 1 t onion powder
  • 1 t chili powder
  • 1 t salt
  • 2 chipotle pepper in adobo seasoning, chopped
  • 1.5 c Cheese (divided into 1/2 c and 1 cup) (you can use Daiya Brand vegan cheese)

Directions

  1. Cook your brown rice (can be made the day ahead).
  2. Cut the tops off and remove the seeds from the peppers.
  3. Place 4 peppers in the air fryer with a spritz of olive oil. Cook @ 400F for 15 min.
  4. While the peppers are cooking, brown the turkey.
  5. To the turkey, add spices, cooked quinoa, drained black beans, and 1/2 c cheddar cheese.
  6. When peppers have cooked, fill with turkey/quinoa mixture, top with cheese. Cook @ 400F for 5 min.

Notes:
– Serving suggestions: serve with a side salad, steamed veggies, sour cream or vegan plain yogurt.
